This Christmas, my sister bought me a Cuisinart Round Classic Waffle Maker, which I’ve been dying to get to make my own waffles (thanks, sis!). Yesterday, I finally got around to opening it and using it. I made oat & spelt flour cinnamon waffles, topped with a delightfully sweet bananas foster sauce. Completely healthy and free of refined sugars and full of fibre and protein. It was delicious, and a great way to start the morning! Definitely going to try to use this machine weekly 🙂
Ingredients – Waffles
Makes 6 round waffles
- 1/2 cup all-purpose flour
- 1/2 cup oat flour
- 1/4 cup spelt flour
- 1/2 tsp baking soda
- 1.5 tbsp baking powder
- 2 tsp cinnamon
- 1/2 tsp salt
- 1 cup non-dairy milk (I used almond milk)
- 4.5 tbsp egg whites (alternatively, you could use 2 eggs)
- 4 tbsp maple syrup (or other liquid sweetener) *see note
Combine all dry ingredients in one bowl. Combine all wet ingredients in another small bowl. Whisk wet ingredients to the dry ingredients until combined. It’s okay if there are a bit of lumps. If the batter seems too thick (it should be able to be poured), add a bit more milk.
Preheat your waffle maker as per instructions. Spray or grease the waffle maker with an oil (e.g., grapeseed or unrefined virgin coconut).
Ingredients – Bananas foster sauce
- 3 tbsp coconut milk
- 1/2 cup coconut sugar
- 2 bananas, sliced at an angle
- 1/3 cup walnuts, chopped
- 1 tsp vanilla extract
- 1 tsp maple extract (optional) *see note
- 2 tsp brandy or rum (optional)
Heat milk and sugar (and brandy or rum, if using) in a pan over medium heat. Once dissolved and begins to reduce, add extract and whisk. Then add bananas and walnuts, and use a spoon to coat. Remove from heat and top waffles!
- You could use regular sugar in place of the sweetener, however I would replace the liquid elsewhere (i.e., milk)
- Maple extract gives it a maple taste that can make it feel like maple syrup. If this isn’t on hand, feel free to omit or use maple syrup
- If you find that the waffles are sticking to the iron, you could add a couple tablespoons of oil to the batter!
