This yummy smoothie has all the flavours of carrot cake. Carrot cake is so yummy, filled with that cinnamon-y goodness. I used to love eating carrot muffins as a kid. This time, I put all the flavours into a smoothie and it was delicious. Carrots are a good source of vitamins and beta carotene, which is important for your body! And, this is completely vegan and sugar free, using only the sweetness from the banana. This also has coconut water (though you can use regular old water), which is basically the liquid from a young coconut when you break it open. It is full of electrolytes that can hydrate your body, and is especially good after a workout (no more gatorade junk!). Give this a try — you’ll love it.
Makes 2 servings
- 3/4 cup milk of choice
- 2 medium carrots, peeled and chopped
- 1 frozen banana
- 1/2 heaping tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp ground ginger (or fresh)
- 1/8 tsp ground cloves (optional)
- 1/8 tsp allspice (optional)
- 1/2 cup coconut water ice cubes (or use regular ice cubes)
Throw all ingredients into your high-powered blender and blend until smooth. Enjoy!
