Matcha Waffles

Hi, I’m Dane, and I’m addicted to waffles.

You know me and my waffle addiction. I recently bought some matcha to make smoothies. However, I was inspired by my mocha waffles and thought, well, if I can add cocoa powder to the batter, why not matcha?

And, since tomorrow is St. Patty’s Day, the green is perfect!

Matcha is a Japanese fine powder green tea. It has many antioxidants, more so than other regular green teas, particularly because the whole tea leaf is ingested, rather than steeped.

After a hot yoga session with my sister and her friend one Saturday morning, I decided I’d make these waffles (which are vegan!) alongside some scrambled eggs and turkey bacon. These waffles turned out great, and super delicious, especially when drizzled with maple syrup. Definitely a great item to make after a workout!

Buuuut, since this is St. Patty’s Day, maybe you can enjoy these before your drinking festivities tomorrow 🙂

Ingredients
Makes 6-7 waffles

  • 1 and 1/4 cup flour (whole wheat, spelt, oat, etc)
  • 1 and 1/2 tbsp baking powder
  • 1/2 tsp baking soda
  • 3 tbsp coconut sugar
  • 1 and 1/2 tbsp matcha
  • 1/4 tsp salt
  • 1 and 1/2 cup of non-dairy milk 
  • 1 tsp vanilla
  • 6 tbsp grapseed oil

In a medium bowl, add all the flours, baking powder, baking soda, salt, coconut sugar, and matcha together. Whisk until combined. In a separate small bowl, whisk the milk, vanilla, and oil together. Pour into dry ingredients, and whisk until combined.

Preheat and grease waffle iron, and use as instructed. Serve with maple syrup. Enjoy!

Notes

  • You can use any combination of flour
  • The waffles aren’t sweet on their own, but it tastes perfect with maple syrup. The combination brings out the matcha flavour. If you would like it sweeter, add more sugar
  • The waffles weren’t as green as I’d hoped they would be, so you could probably add a bit more matcha powder if you like! I could still taste the flavour.
  • Feel free to turn any of my waffle recipes into pancakes if you don’t own a waffle iron!
