I’m sorry, I know I post a lot of waffle recipes, but I just can’t get enough! Plus, I can do anything and make different types of flavours. You can also make a batch and freeze it, toasting it when you want a breakfast on the go during the week. And if you aren’t a waffle person, or you don’t own a waffle iron, these recipes work great as pancakes.
Banana and chocolate chips are a classic combination. You guys have already seen my banana chip muffins. This time, I made them into waffles. These waffles use the natural sweetness of the banana as well as the chocolate chips. Perfect for a Saturday morning!
Makes 6 waffles
- 1/2 cup spelt flour
- 3/4 cup oat flour
- 1 and 1/2 tbsp baking powder
- 1/2 tsp baking soda
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp salt
- 1 tbsp ground flax (optional)
- 1-2 bananas, mashed (about 1/4 to 1/3 cup)
- 1 cup non-dairy milk
- 1 tsp vanilla
- 6 tbsp oil
- 1-2 tbsp non-dairy chocolate chips
In a medium bowl, add all the flours, baking powder, baking soda, flax, salt, cinnamon, and nutmeg together. Whisk until combined.
In a separate small bowl, whisk the milk, vanilla, and oil together. Pour into dry ingredients, and whisk until combined. Preheat and grease waffle iron, and use as instructed.
- For oil free version, use applesauce
