Roasted Tomato Sauce

So it’s Canada Day here, and that means all things red and white! And what better way than making a red sauce 😉

That wasn’t why I made this… but it is red! I love a good tomato sauce. And I love pasta. I’ve already posted a couple sauce recipes, but this time, I thought I’d make a simple roasted red tomato sauce. It really tastes so much better than the jarred stuff you find at the store. I mean, of course it would be, when you use the freshest ingredients with no additives or preservatives. And you control what you put in it.

I had a bunch of tomatoes that I needed to use up, so the quickest way I thought would be to either make a soup or sauce. Given that my family doesn’t really like tomato soup (I know… I can’t believe it either!), a tomato sauce with pasta was the easiest way to please them. And it was a big hit! This sauce is super easy to make even as you return home from work. And I’m all about making it simple 🙂

Ingredients

  • 5 large tomatoes (you can use roma tomatoes too!)
  • 4 cloves of garlic (with skin)
  • 7-10 leaves of basil
  • 1 tsp dried oregano
  • 1/4 cup sun-dried tomatoes, oil drained
  • 1/2 tbsp red chilli flakes
  • 1/2 tbsp agave
  • 1/2 an onion, diced
  • salt and pepper to taste

Preheat oven to 400 degrees F. Slice tomatoes in half and place tomatoes (cut side down), and garlic on tray. Place in oven, and let roast for about 30 minutes. After, you’ve taken them out and they’ve cooled down, you can peel the skins of the tomatoes, and the garlic.

Add this to the jug of your blender, along with the basil, oregano, sun-dried tomatoes, red chilli flakes, onion, and agave. Add some water to get it going, and you can continue adding water to get the consistency you want. Altenratively, you can add a can of tomatoes.

Add this to a pot on medium heat, and let it heat through. At this point, you can add a drizzle of olive oil, and season with salt and pepper. Serve a top a bed of pasta!

I made some garlic bread and added chicken (which I ground up) on top of kamut pasta. Delicious!

I think I may even use this as a pizza sauce. Hmm… New recipe idea…
